Recipe: Panko Chicken with Lemon Tarragon Sauce

This delicious chicken recipe takes only 30 minutes to prepare. Honest!

As a family caregiver, you’re no doubt strapped for time when it comes to meal preparation. And then there’s the issue of trying to get a meal that’s actually healthy on the table instead of fast food or something too high in fat or sodium for your loved one’s diet.

That’s why I created Nourish the Caregiver. Every Tuesday and Thursday, you’ll receive an original recipe that’s healthful and (usually) fast and easy to get on the table. This week, I’m sharing two great recipes: Herbed Pork Medallions with Blackberry Mustard Sauce and Panko Chicken with Lemon Tarragon Sauce. Either of these main dishes can be served with a family-pleasing side dish of your choice, like a tossed salad, hot vegetable, or potatoes.
